dcterms.abstract | This book has one hundred thirty-eight recipes with ingredients listed in one to three paragraphs. The book is in two parts: the foods of China and the foods of Thailand. The Chinese section recipe chapter titles are: Poultry; Seafood; Meat; Grains and Curd; and Vegetables and Fruit. Interspersed with these are varied chapters with many full-color photographs and information about: Beijing Classical Cuisine; Shanghai: the Gourmet's Metropolis; Guangzhou: the Jagged Coast; Sichuan: the Spicy Basin; and Yunnan: Below the Clouds. In the Chinese half of the book, each recipe indicates where it originated from and is titled in Chinese ideographs and English. Most recipes are accompanied by color photographs of completed dishes by Luca Invernizzi Tettoni and John Hay. The recipes in this section are credited to culinary authorities in their respective regions.
