dcterms.abstractThis book has seventy-five recipes with ingredients listed. Chapters include: Fowl Dishes; Meat Dishes; Seafood Dishes; Vegetable Dishes; Soups; Desserts; and, Pastries. Before the recipes, fifty-two pages include an introduction by Maria Teresa Clark Kerr, a foreword about Chinese food about being a housewife, ten cooking methods, selecting ingredients, service, dinners in restaurants and at home, table manners, seating, twelve thing not to do at the table, use of chopsticks, holding rice bowls, and wine, and tea. Included is information about fourteen utensils listed in English, romanized Cantonese, and Chinese, some with black and white line drawings. There is a glossary of nine ingredients. After the recipes, there are ten suggested menus. Also included is a chart of tastes with ideograph, ancient pictograph, and pronunciations. A list of romanized Chinese words, with meanings and reference pages are included. A few illustrations, some humorous, and black and white and color photographs by Henry Liu, accompany the text. The book is subtitled: Secrets of Chinese Cooking; several later editions indicate author's name as Dolly Chow.
