dcterms.abstractThis book, mostly written in Chinese, has sixteen recipes in English amd seventy-eight in Chinese. There is an English preface by Xie Binxin, a four page survey of Beijing cuisine by Chang You-Luan, and a single page about the taste of Beijing dishes by Zhang Junqui. The recipes are from six restaurants in Beijing. A few paragraphs before most of the recipes discuss history, culture, and food. There are magnificent photographs of all recipes, restaurants, cold platters, farms, and other items. This is the first of a nine-volume series titled Authentic Chinese Cuisine. They were published in cooperation with Shanghai Food and Drink Service Company to introduce Chinese cuisine, primarily through illustrations, to the people of Japan.
