dcterms.abstract | This book, mostly written in Chinese, has eighteen recipes in English and ninety-seven in Chinese. There is an English preface by Lie Jie-qong, a single page by Aisin Jue Luo discussing Imperial flavor, and another page by Pu Jie about Qing Zhen dishes. The recipes are from five restaurants in Beijing. A few paragraphs before most of recipes discuss history, culture, and food. There are magnificent photographs of all recipes, restaurants, dim sum in the Beijing style, Moslem mosques, wines and spirits, and other items. This is second in the nine-volume series titled Authentic Chinese Cuisine. | |
