dcterms.abstractThis book has two hundred sixty-five recipes with the ingredients listed. The first Singapore edition, published in 1952, has not been located. This second edition has recipe chapters titled: Chicken; Duck; Fish. Pork; Beef; Mutton and Lamb; Game; Seafood; Egg; Vegetables; Soup; Chinese Chafing Dishes; Sandy Pots; Rice; Noodles, Pastry; Sweet Dishes; Sweet and Sour Dishes; Bird's Nest; Sharks Fins; Chop Suey; and Seasonings. Before the recipes is a two page foreword by Rt. Hon. Malcolm MacDonald, Commissioner-General of South-East Asia. There is also a single page preface by Lady Y.P. McNiece. Two pages include an author's note, and people and press opinions. There is a seventeen page, six chapter introduction about cooking utensils, choice and variety of foods, seasoning, methods of preparation and cooking, and seven suggested menus. Recipes are titled in Chinese and English, some illustrated with black and white line drawings.
