dcterms.abstractThis booklet has eighty recipes written in standard cookbook style. Recipe categories iinclude: Soups; Beef; Pork; Chicken; Duck; Egg; Sea Foods; Vegetables; Rice; Noodles; Hors d'oeuvres; and Desserts. Before the recipes there are seven pages about the pamphlet, cooking hints, a description of sixteen common cooking terms, illustrations of three cutting techniques, a list of ingredients to keep in stock, how to give a party, and sixteen suggested menus. Except for the line drawing on the cover, the booklet has no illustrations. The author was Columbia University M.A. student in Home Economics Education. The booklet is subtitled: `A collection of simple Chinese recipes adapted for the American kitchen.`
