Before the recipes, there are sixty one pages about the Chinese diet, food as art, Chinese cooking, regional variations, eleven cooking techniques, cleavers and cutting methods, kitchen equipment, stock, rice, and tea. After the recipes, there are more than a hundred pages about meal preparation, service, and table settings, chopstick use, and more than one hundred suggested menus for groups of various sizes. Includes an extensive how-to section about stir-frying, information on teas and wines, food substitutions, storage suggestions of individual ingredients. Included is a twenty-nine page glossary of two-hundred-eighty-one ingredients, English and romanized Cantonese food list, and mail-order sources. There is a thirty-four page, two column, cross-referenced index. Accented with many black and white illustrations, all by Earl Thollander. | |
