dcterms.abstract | This book is a second printing of the second edition; it is identical to the 1956 edition. Contained in the book are one-hundred-ninety-two recipes written with the ingredients listed. The recipe category titles are: Appetizers; Soups; Eggs; Sea Food; Fowl; Meat; Vegetables; Rice; Noodles and Buns; Desserts. There is a foreword by Arthur J. Marder and preface by the author. Before the recipes, there are twenty-four pages discussing China, special meals, tea, wine, and cutting and cooking methods. Includes a five page glossary of forty ingredients. Background material and a discussion on utensils and customs is included before every recipe chapter. After the recipes, there are six suggested menus. Features a four page, two column recipe index. The book is decorated with a few black and white line drawings by Clemente Lagundimao. | |
